Ingredients

  • 1 9-inch sponge cake layer
  • 1 quart ice cream (any flavor)
  • 4 large egg whites (room temperature)
  • 1 cup sugar
  • 1/4 tbsp cream of tartar
  • 1 tbsp vanilla extract

Equipment

  • 9-inch cake pan or serving plate
  • Electric mixer or hand mixer
  • Mixing bowl
  • Spatula
  • Baking sheet
  • Oven or kitchen torch

Method

  1. Place the sponge cake on a baking sheet or oven-safe plate.
  2. Spread firm ice cream over the cake in a dome shape and freeze for 1–2 hours until solid.
  3. Beat egg whites and cream of tartar until soft peaks form. Gradually add sugar and beat until stiff peaks, then mix in vanilla.
  4. Spread the meringue over the frozen ice cream, covering it completely.
  5. Bake at 475°F (245°C) for 3–5 minutes or torch until the meringue is golden brown.
  6. Slice and serve immediately. 🍨🔥
  7. 1- Always make sure your ice cream is firm before assembling; soft ice cream will melt too quickly.
2- Let the cake base cool completely before layering.
3- Ensure that your mixing bowl and beaters are clean and dry before whipping egg whites,  even a drop of grease can prevent stiff peaks.

Notes

This classic Baked Alaska recipe features a delicious combination of sponge cake, creamy ice cream, and fluffy toasted meringue. The insulating meringue allows the dessert to be briefly baked at high heat, creating a golden crust while keeping the ice cream frozen inside. Perfect for special occasions, holidays, or dinner parties, Baked Alaska is a dramatic dessert that looks impressive yet is surprisingly simple to make at home.
