Ingredients
  

  • 1 lb Chicken: boneless chicken thighs or breasts
  • (to taste) Salt & pepper
  • 1 tbsp garlic powder (optional)
  • 8-10 skewers
  • 1/2 cup Bang Bang Sauce: mayonnaise
  • 2-3 tbsp sriracha
  • 1 tbsp honey (or sugar)
  • 1 tbsp rice vinegar or lime juice

Method
 

  1. If using wooden skewers, soak in water for 30 minutes.
  2. Cut chicken into even bite-sized pieces.
  3. Season with salt, pepper, and garlic powder.
  4. Thread chicken onto skewers.
  5. In a bowl, mix mayonnaise, sriracha, honey, and vinegar/lime until smooth.
  6. Grill (or bake at 400°F / 200°C) for 12–15 minutes, turning halfway, until internal temp reaches 165°F (74°C).
  7. Brush with Bang Bang sauce during the last few minutes of cooking or drizzle before serving.
  8. Serve warm with extra sauce on the side.
