  • 2 cups granulated sugar (plus extra for coating)
  • 1 cup water
  • 1 tbsp vanilla extract (optional)
  • 1 g dark chocolate (optional, for dipping)

Method
 

  1. Wash oranges thoroughly. Slice off ends and score peel into quarters. Remove peel and cut into thin strips.
  2. Place peels in a saucepan, cover with water, and boil 10 minutes. Drain. Repeat once to reduce bitterness.
  3. In the saucepan, combine 2 cups sugar and 1 cup water. Bring to a gentle simmer.
  4. Add peels and simmer 30–45 minutes until translucent and tender.
  5. Stir in vanilla extract (optional).
  6. Remove peels and place on a rack or parchment-lined tray to dry 4–12 hours.
  7. Toss in extra sugar if desired.
  8. Optional: Dip dried peels halfway in melted dark chocolate and let set.
