Ingredients
  

  • 1 lb Jimmy Dean sausage (original or hot), cooked, crumbled, and fully drained
  • 4 cups frozen hash browns or cubed potatoes, thawed
  • 8 large eggs room temperature
  • 2 cups milk or half-and-half (half-and-half for creamier texture)
  • 2 cups shredded cheddar cheese
  • Salt and black pepper to taste
  • 1/2 cup diced bell peppers Optional Add-Ins
  • 1/2 cup diced onions Optional Add-Ins
  • 1/2 cup sliced mushrooms Optional Add-Ins
  • 1/2 cup chopped spinach Optional Add-Ins

Method
 

  1. Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter.
  2. Cook the sausage in a large skillet over medium heat until fully browned and crumbled. Drain excess grease completely.
  3. Prepare the base layer by spreading the thawed hash browns evenly in the bottom of the prepared baking dish.
  4. Add the sausage evenly over the hash browns.
  5. Sprinkle the cheese evenly over the sausage layer.
  6. Whisk the eggs and milk together in a large bowl until fully combined. Season lightly with salt and black pepper.
  7. Pour the egg mixture evenly over the casserole layers.
  8. (Optional) Sprinkle diced vegetables on top or mix them into the egg mixture before pouring.
  9. Bake uncovered for 40–50 minutes, or until the center is set and a knife inserted comes out clean.
  10. Rest for 5–10 minutes before slicing and serving.
