  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup melted unsalted butter
  • 8 oz cream cheese (softened)
  • 2 cups powdered sugar
  • 1 tbsp vanilla extract
  • 1 cup sweetened shredded coconut
  • 1 cup white chocolate chips
  • 1/2 cup diced fresh strawberries (optional)

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. Prepare cake batter by mixing cake mix, eggs, and oil until combined. Spread evenly in the pan.
  3. Sprinkle shredded coconut and white chocolate chips evenly over the batter.
  4. In a separate bowl, beat cream cheese, melted butter, powdered sugar, and vanilla until smooth.
  5. Spoon cream cheese mixture over the cake batter in dollops.
  6. Gently swirl with a knife to create a marbled “earthquake” effect.
  7. Sprinkle diced strawberries on top (if using).
  8. Bake 40–45 minutes. Center should remain slightly gooey.
  9. Cool before slicing to allow layers to set.
